Gluten-Free Oatmeal Chocolate Chip Cookies

Ingredients

  • Oats (Old-Fashioned) 2 Cups

  • Oat flour (Arrow GF) 1 Cup

  • Bobs 1 to 1 GF. Flour ¾ Cup (or use all Oat flour)

  • Baking soda 1 teaspoon

  • Eggs – large, room temp. 2 eggs

  • Brown sugar packed ¾ Cup

  • Sugar ½ Cup

  • Butter/Coconut oil 1 ½ sticks (6 fl. oz) (if making ‘green’, go only half green for taste)

  • Salt ¼ teaspoon

  • Cinnamon ½ teaspoon

  • Nutmeg 1/8 teaspoon

  • Vanilla extract 1 ½ - 2 Tablespoons

  • Chocolate Chips 2 Cups

Instructions

Bake at 350F for 10-12 minutes (I usually go 11 min, turning pans once front-back

This recipe makes about 50 - ¾ oz to 1 oz cookies; I use a 2 oz scoop and find the batter

portions better if it sits for about 15 minutes before panning
