Carrot Cake

Makes 60 servings


Ingredients:

4 1/2 cups canola or other vegetable oil

6 cups white sugar

6 cups flour

3 tsp salt

2 Tbls cinnamon

3 tsp baking soda

12 eggs

9 cups shredded carrot

3 cups chopped walnuts

Instructions:

Preheat oven to 350

Grease a deep sheet tray

Sift together dry ingredients

Beat together the oil and dry ingredients

Beat in the eggs one at a time until smooth

Stir in the carrots and walnuts

Pour the batter into the prepared deep sheet tray and bake at 350 for 40-45 mins

Let Cool completely before icing
