Chef Billy’s Jamaican Jerk Seasoning
1 cup whole thyme leaves
1/2 cup ground allspice
1/4 cup ground cinnamon
2 Tablespoon ground nutmeg
Jamaican Jerk Marinade
2 cups Jerk Seasoning
2 cups brown sugar
1 each yellow onion, diced
12 each habanero, sliced
1/2 gallon soy sauce
1 quart apple cider vinegar
Jamaican Rice and Peas
2 each yellow onion, diced
2 lb dried red kidney beans plus 1/2 gallon cooking liquid, salted
1 gallon long grain rice
1 gallon water
1 each #10 can coconut milk
2 sprig fresh thyme
1/4 cup chopped garlic
2 whole habanero
Boil kidney beans until tender
In a separate stock pot, saute onion and garlic
Add water, coconut milk, and thyme. Cover, bring to boil
Add rice. Lower heat and simmer, covered, 20 min.
Add beans, cooking liquid, and habanero. Stir well. Simmer at low temp, covered until done.
Remove thyme and habanero before serving.
