This recipe is perfect for summer months-- or for when you are craving a taste of summer in the dead of winter. Sweet, tangy, and buttery; it's hard to go wrong!
Serves 60, Prep Time 30 minutes, Total Time 65 minutes
Crust:
2 cups unsalted butter, softened
6 cups flour
1 1/2 cups powdered sugar
Filling:
1 tsp. salt
2 tsp. baking powder
16 eggs
8 cups sugar
1 cup flour
1 cup fresh lemon juice
2 tbsp. lemon extract
Instructions:
Preheat oven to 375F.
Combine butter, powdered sugar, and flour and pat into the bottom of a sheet tray.
Bake at 375F for 15 minutes. Remove crust and let cool.
Separately beat eggs until smooth and add sugar, lemon juice, and lemon extract.
Sift together dry ingredients and add them slowly to the wet ingredients until smooth.
Pour into crust and bake at 375 for 18-20 minutes.
Sprinkle with powdered sugar and serve.
