Spaetzle

Yield: 6 servings

Ingredients:

  • 3 cup AP flour

  • ¾ cup milk

  • 6 eggs

  • 1.5 tsp ground nutmeg


  • 3 pinches ground white pepper

  • 1.5 tsp salt

  • gallosn of hot water

  • ¼ cup and 2 TB butter

  • ¼ cup and 2 TB chopped fresh parsley

Instructions:

1) Mis flour, salt, white pepper, and nutmeg. Beat eggs well and add

alternately with milk to the dry ingredients, mix until smooth

2) Press dough trough spaetzle maker or sieve

3) Drop into simmering liquid

4) Sautee in butter or margarine, sprinkle with parsley and serve
