Yield: ~1 hotel pan
Ingredients:
1 cup olive oil
4 red bell peppers, seeded and chopped
4 Anaheim, or other mild pepper, seeded and chopped
4 jalapeno peppers, seeded and minced
3 medium onions, chopped
10 garlic cloves, minced
¼ cup ground cumin
¼ cup chili powder
5 tbsp. paprika
4 cups pineapple juice
1 #10 can diced tomatoes
1 #10 can tomato sauce
2 15-ounce cans red kidney beans, rinsed and drained
2 15-ounce cans white kidney beans, rinsed and drained
2 15-ounce cans black beans, rinsed and drained
Salt and pepper to taste
Heat the olive oil over medium heat and sauté the peppers, onions, and garlic until soft, about 8 minutes.
Stir in the spices, then add the remaining ingredients and bring to a boil. Simmer for 45 minutes, adding water if needed. Season with salt and pepper as needed.
