Veggie and Bean Burgers

Yield: 24 patties

Ingredients:

1.5 cups uncooked brown rice

3 cups water

3 cups broccoli florets

12 ounces mushrooms

3 red bell pepper, chopped

6 15-ounce cans garbanzo beans, drained, rinsed

6 eggs

6 garlic cloves

Salt and pepper to taste

1 onion, chopped

2 cups bread crumbs

1 cup olive oil

Cook the rice.

Meanwhile, place the broccoli, mushrooms, and bell pepper in a food processor, pulse the mixture to finely chop the vegetables. Do not puree.

Stir the chopped vegetables into the cooked rice. In the food processor, add the beans, eggs, garlic, salt and pepper, and process until smooth. Stir bean mixture, onions, and bread crumbs into the vegetable and rice mixture. Shape the mixture into patties.

Heat the oil and brown the patties over medium-high heat. (They can also browned in the oven)

Serve the patties with hamburger buns and accompaniments’.
