Meatless Meatloaf with Cheddar Cheese

Yield: ~ 1 hotel pan


2-3 lbs. cheddar cheese, shredded

24 cups cooked lentils

3 large onions, chopped and sautéed

1 tbsp. dry thyme leaves

12 cups bread crumbs

12 eggs

1 cup butter, softened

Salt and pepper to taste

Preheat the oven to 350 degrees F.

Combine the cheese, lentils, and onion. Add the thyme, and season with salt and pepper.

Mix in the bread crumbs, egg and butter. Make sure the mixture is well blended. Bake in a greased loaf pan for 45 minutes.
