Soba Noodles with Asian Greens and Tofu

This delicious noodle dish is great served cold or warm, right away or after a few days in the fridge, with all the recommended ingredients or a few miscellaneous mix-ins. It's really up to you. No matter what, this forgiving recipe will turn out delicious.


Serves 24, Prep Time 30 minutes, Total Time 45 minutes

Ingredients:

5 lb. soba noodles

5 lb. Asian greens, chopped

1/2 cup sesame oil

3/4 cup canola oil

15 garlic cloves, minced

6 cups shredded carrot

6 lb. firm tofu, cut into cubes

1/2 cup soy sauce

Toasted sesame seeds

Salt and pepper to taste


Instructions: Cook the noodles in a pot of boiling, salted water until tender, about 5 minutes. During the last minute of the cooking time, add the greens to soften slightly. Drain well and toss with the sesame oil. Set aside.


Heat the canola oil in a large pot over medium heat. Add the garlic and carrot and stir-fry for 30 seconds. Add the tofu and stir-fry for 3 minutes. Add the noodles and greens, and the soy sauce, and gently stir-fry until hot. Season as needed with salt and pepper.


Sprinkle with the toasted sesame seeds.
