Sweet Plantain Fritters

Yield: 30 Pieces


Ingredients:

  • 10 Yellowed Plaintains cut in 2 inch sections with peel on

  • 1 cup melted butter

  • 3 TBLSP Lime Juice

  • 2 bunches scallions


Instructions:

  1. Boil unpeeled wheels until bamboo skewers the pieces easily

  2. Sautee two bunches scallions, chopped with 6 cloves garlic, and salt and pepper.

  3. Mash with 1 cup of melted butter and 3 TBSP lime juice.

  4. Cool, form balls with small ice cream scooper.

  5. Fry in 360 degree oil until caramelization begins, approx 4-5 minutes.

  6. Drain, serve with a spicy or herbed sauce.

  7. For the “Mofongo version, use the same recipe but use only green plaintains, not

  8. yellowed.
